Description

Hibachi-style chicken fried rice is a flavorful and satisfying dish inspired by Japanese steakhouse favorites. Made with tender diced chicken, fresh vegetables, scrambled eggs, and perfectly seasoned jasmine rice, all stir-fried on high heat to create a delicious, restaurant-style meal you can easily make at home.

  • 2 cups cooked jasmine or long-grain white rice (preferably day-old)
  • 1 pound boneless, skinless chicken breast or thighs, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil, divided
  • 2 large eggs, beaten
  • ½ cup diced onion
  • ½ cup frozen peas and carrots, thawed
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • Salt and pepper to taste

  • Extra soy sauce for serving

Instructions

  1. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 5–6 minutes until fully cooked and browned. Remove the chicken from the pan and set aside.
  2. Sauté the vegetables: In the same pan, add the remaining vegetable oil and sauté the diced onion for 2 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant. Add the thawed peas and carrots and cook for another 2 minutes until tender.
  3. Cook the eggs: Push the cooked vegetables to one side of the pan and pour the beaten eggs into the empty side. Scramble the eggs gently until cooked through, then mix the eggs with the vegetables.
  4. Stir-fry the rice: Add the cooked rice to the pan and stir-fry for 2–3 minutes, breaking up any clumps to evenly heat the rice and combine it with the vegetables and eggs.
  5. Combine and season: Return the cooked chicken to the pan. Add soy sauce, sesame oil, and butter. Stir everything together until well combined and heated through. Taste and adjust seasoning with additional salt, pepper, or soy sauce as desired.
  6. Garnish and serve: Garnish the fried rice with chopped green onions and serve hot, optionally adding extra soy sauce for flavor.

  • Use day-old rice for the best texture to prevent sogginess.
