- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced into thick rounds
- 3 celery stalks, chopped
- 2 pounds potatoes, peeled and cut into chunks
- 1 cup frozen peas
Additional Ingredients:
- 2 tablespoons tomato paste
- 4 cups beef or lamb stock
- 1 cup Guinness stout (optional, can substitute with more stock)
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
- 2 bay leaves
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Prepare the Lamb: Toss the lamb cubes with flour, salt, and pepper until coated.
- Brown the Lamb: Heat vegetable oil in a large Dutch oven, brown the lamb in batches, and set aside.
- Cook the Vegetables: Add onion, garlic, carrots, and celery to the pot, cook until softened.
- Add Remaining Ingredients: Stir in tomato paste, stock, Guinness, potatoes, thyme, and bay leaves.
- Simmer: Bring to a boil, then cover and simmer for 1 1/2 to 2 hours until lamb is tender.
- Finish: Stir in peas, adjust seasoning, and garnish with parsley before serving.
Notes
- For deeper flavor, make the stew a day ahead and reheat before serving.
