Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
Soup:
- 3 cups beef broth
- 1 (15 oz) can diced tomatoes, with juices
- 1 (15 oz) can corn, drained
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can diced potatoes, drained
- 1 (10 oz) can diced tomatoes with green chilies (such as Rotel)
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Brown Ground Beef: In a skillet over medium heat, brown the ground beef with the diced onion until fully cooked. Add the minced garlic and cook for another minute. Drain any excess fat and transfer the mixture to the crockpot.
- Add Ingredients: Add beef broth, diced tomatoes, corn, pinto beans, diced potatoes, diced tomatoes with green chilies, chili powder, smoked paprika, oregano, salt, and black pepper. Stir everything to combine.
- Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours, until vegetables are tender and flavors are well combined. Stir before serving and adjust seasoning if needed.

- For a thicker soup, mash some of the potatoes or beans before serving.
