Ingredients
Ground Beef:
1 pound ground beef,
Olive Oil Mixture:
1 tablespoon olive oil,
Aromatics:
1 small yellow onion diced, 2 cloves garlic minced,
Seasonings:
1 teaspoon dried oregano, 1/2 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper,
Orzo and Broth:
1 cup uncooked orzo pasta, 2 cups beef broth,
Tomatoes and Cheese:
1 can (14.5 ounces) diced tomatoes with juice, 1/4 cup grated Parmesan cheese, 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cook Ground Beef: In a large skillet or deep sauté pan, heat olive oil over medium heat. Add the ground beef and cook until browned and fully cooked. Drain excess grease if needed.
- Sauté Aromatics: Add the diced onion and garlic, cook until softened.
- Add Seasonings: Stir in oregano, paprika, salt, and pepper.
- Cook Orzo Mixture: Add orzo, beef broth, and diced tomatoes. Bring to a simmer, cover, and cook for 10–12 minutes until orzo is tender and liquid is absorbed.
- Finish and Serve: Remove from heat, stir in Parmesan cheese, let sit briefly to thicken. Garnish with parsley and serve hot.
Notes
- For a creamy version, stir in 1/4 cup heavy cream or cream cheese at the end.
- You can add spinach or zucchini for extra veggies.
