Ingredients

Ground Beef:

1 pound ground beef,

Olive Oil Mixture:

1 tablespoon olive oil,

Aromatics:

1 small yellow onion diced, 2 cloves garlic minced,

Seasonings:

1 teaspoon dried oregano, 1/2 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper,

Orzo and Broth:

1 cup uncooked orzo pasta, 2 cups beef broth,

Tomatoes and Cheese:

1 can (14.5 ounces) diced tomatoes with juice, 1/4 cup grated Parmesan cheese, 2 tablespoons chopped fresh parsley (optional)


Instructions

  1. Cook Ground Beef: In a large skillet or deep sauté pan, heat olive oil over medium heat. Add the ground beef and cook until browned and fully cooked. Drain excess grease if needed.
  2. Sauté Aromatics: Add the diced onion and garlic, cook until softened.
  3. Add Seasonings: Stir in oregano, paprika, salt, and pepper.
  4. Cook Orzo Mixture: Add orzo, beef broth, and diced tomatoes. Bring to a simmer, cover, and cook for 10–12 minutes until orzo is tender and liquid is absorbed.
  5. Finish and Serve: Remove from heat, stir in Parmesan cheese, let sit briefly to thicken. Garnish with parsley and serve hot.

Notes

  • For a creamy version, stir in 1/4 cup heavy cream or cream cheese at the end.
  • You can add spinach or zucchini for extra veggies.
