Pasta Salad
- 12 oz rotini or pasta of choice (cooked and cooled)
- 1 cup chopped romaine lettuce
- 1 cup cherry tomatoes (halved)
- 1/2 red onion (thinly sliced)
- 1/2 cup sliced pepperoncini
- 1/2 cup sliced black olives
- 4 oz salami (sliced into strips)
- 4 oz deli ham (sliced into strips)
- 4 oz provolone cheese (cut into small cubes)
Dressing
- 1/3 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Prepare Dressing: In a small bowl, whisk together mayonnaise, red wine vinegar, olive oil, Italian seasoning, garlic powder, salt, and pepper until smooth and creamy.
- Combine Ingredients: In a large mixing bowl, combine cooked pasta, chopped romaine, cherry tomatoes, red onion, pepperoncini, olives, salami, ham, and provolone cheese.
- Toss with Dressing: Pour the dressing over the pasta salad and toss until everything is well coated.
- Chill: Chill for at least 30 minutes before serving to let the flavors blend.
- Serve: Serve cold and enjoy.

- You can substitute meats and cheeses to your taste—turkey, capicola, or mozzarella all work well.
