Eggplant:
- 2 medium eggplants, sliced into ½-inch rounds
Seasoning:

Garnish:
- Chopped fresh parsley or basil for garnish (optional)
Instructions
- Preheat the Grill: Preheat the grill to medium-high heat (about 400°F / 204°C).
- Prepare the Seasoning: In a small bowl, whisk together the olive oil, garlic powder, oregano, salt, and pepper.
- Season the Eggplant: Brush both sides of the eggplant slices with the seasoned oil mixture.
- Grill the Eggplant: Place the eggplant rounds directly on the grill grates. Cook for 3–4 minutes per side until grill marks appear and the eggplant is tender.
- Serve: Remove from the grill, garnish with chopped fresh parsley or basil if desired, and serve warm or at room temperature.
Notes
- For added flavor, drizzle with balsamic glaze or sprinkle with crumbled feta before serving.
