Description

This Greek Meatballs and Orzo Skillet is a delicious one-pan meal that combines flavorful meatballs with orzo pasta, cherry tomatoes, and feta cheese, all cooked together for a Mediterranean-inspired dish. Perfect for a quick and easy weeknight dinner!

Meatballs:

  • 1 pound ground lamb or beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated red onion
  • 2 cloves garlic (minced)
  • 1 egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Orzo Skillet:

  • 2 tablespoons olive oil
  • 1 cup uncooked orzo pasta
  • 2 1/2 cups low-sodium chicken broth
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • juice of 1/2 lemon

Instructions

  1. Make the Meatballs: In a large bowl, combine ground meat, breadcrumbs, grated onion, garlic, egg, oregano, cumin, salt, and pepper. Form into 1-inch meatballs.
  2. Cook the Meatballs: Heat olive oil in a large oven-safe skillet. Brown the meatballs on all sides, then set aside.
  3. Prepare the Orzo: Toast orzo in the skillet, then add chicken broth. Simmer and add cherry tomatoes and meatballs back to the skillet.
  4. Finish and Serve: Simmer until orzo is cooked, then top with feta, parsley, and lemon juice. Serve warm.

Notes

  • For extra depth, stir in chopped olives or spinach near the end of cooking.
  • Substitute lamb with ground turkey for a lighter version.
