Instructions

  2. Toast the Rice: Add 1 cup of long-grain white rice to the saucepan with the sautéed onion and garlic. Stir continuously for 2-3 minutes until the rice is lightly golden and well-coated with the olive oil, enhancing its nutty flavor.
  3. Add Liquids and Season: Pour in 2 1/2 cups of chicken broth, 1/4 cup fresh lemon juice, and add 1 teaspoon lemon zest, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir to combine. Bring the mixture to a boil, then reduce heat to low, cover, and simmer gently for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Rest and Fluff: Remove the saucepan from heat, keep it covered, and let the rice rest for 5 minutes. Then, fluff the rice gently with a fork to separate the grains.
