Description

This Greek Chicken Marinade is a vibrant and flavorful blend of olive oil, fresh lemon juice, red wine vinegar, garlic, and fragrant Mediterranean herbs. Perfect for marinating boneless chicken thighs or breasts, it infuses the meat with a zesty and aromatic taste, ideal for grilling, stovetop cooking, or baking. This versatile marinade can also be used for pork or vegetables, making it a staple for healthy, delicious meals inspired by Greek cuisine.

Ingredients

Scale

Marinade Ingredients

  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard (optional)
  • Zest of 1 lemon

Instructions

  1. Prepare the Marinade: In a medium bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, dried thyme, dried rosemary, salt, black pepper, Dijon mustard if using, and lemon zest until the mixture is well combined and emulsified.
  2. Marinate the Chicken: Place 1.5 to 2 pounds of boneless, skinless chicken thighs or breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken pieces, making sure they are all evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally between 2 to 4 hours, to allow the flavors to penetrate the meat.
  3. Cook the Chicken: Remove the chicken from the marinade and discard any leftover marinade. Cook the chicken by grilling, stovetop pan-searing, or baking in the oven until the internal temperature reaches 165°F (74°C) and the chicken is golden and cooked through.

Notes

  • This marinade is perfect for meal prep, salads, pitas, or grain bowls.
  • While designed for chicken, it also works beautifully with pork or vegetables.
  • Marinating time can be extended up to 8 hours for more intense flavor, but avoid marinating longer to prevent the acid from breaking down the meat texture too much.
  • Discard the leftover marinade to avoid contamination.
