Instructions
- Prepare the Potatoes and Onion: After grating the potatoes and onion, place them in a clean kitchen towel and squeeze out as much moisture as possible to prevent sogginess and ensure crispiness.
- Mix the Batter: Transfer the drained potatoes and onion to a large mixing bowl. Add the eggs, flour, salt, black pepper, garlic powder (if using), and chopped herbs (if using). Mix thoroughly until fully combined.
- Heat the Oil: Heat about ¼ inch of vegetable oil in a large skillet over medium-high heat. Ensure the oil is hot enough for frying before adding the batter.
- Fry the Pancakes: Drop heaping spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of the spoon. Fry each pancake for 3 to 4 minutes per side or until golden brown and crispy.
- Drain and Keep Warm: Remove the cooked pancakes and drain on a paper towel–lined plate to absorb excess oil. If desired, spread pancakes on a baking sheet in a single layer and keep warm in a 200°F oven until ready to serve.
- Serve: Serve the golden potato pancakes hot with sour cream, applesauce, or your favorite dipping sauce.
