Description

A flavorful and easy Garlic Parmesan Chicken & Potatoes recipe combining crispy air-fried potatoes with tender, seasoned chicken coated in a rich garlic parmesan sauce and topped with melted mozzarella cheese. Perfect for a quick and satisfying meal.

Ingredients

Scale

Potatoes

  • 45 small/medium-sized potatoes, washed, peeled, and cut into small cubes
  • Olive oil (to toss)
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)
  • Paprika (to taste)

Chicken

  • 2 chicken breasts, cut into cubes
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (amount to taste)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prep and Air Fry Potatoes: Wash, peel, and cut the potatoes into small cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika to season. Place the potatoes in the air fryer basket in a single layer and air fry at 400°F for about 20 minutes, shaking the basket occasionally to ensure even cooking and crispiness.
  2. Cook Chicken: While the potatoes air fry, cut the chicken breasts into cubes. Melt the butter in a skillet over medium-high heat. Add the chicken cubes to the skillet and cook until they are browned and cooked through, about 6-8 minutes. Season the chicken with salt, black pepper, paprika, onion powder, and Italian seasoning while cooking.
  3. Combine Ingredients: After the chicken is cooked, add the minced garlic and Garlic Parmesan sauce to the skillet with the chicken. Stir well to coat the chicken evenly with the sauce. Then, add the air-fried potatoes to the skillet and gently toss to combine all ingredients together.
  4. Melt Cheese: Sprinkle the shredded mozzarella cheese over the chicken and potato mixture in the skillet. Place the skillet under the oven broiler for a few minutes until the cheese is melted, bubbly, and lightly golden. Alternatively, cover the skillet with a lid and let it sit over low heat on the stovetop until the cheese melts.
  5. Serve: Serve the garlic parmesan chicken and potatoes immediately while hot and enjoy this comforting, cheesy, and savory dish.

Notes

  • You can substitute mozzarella with parmesan or cheddar cheese if preferred.
  • Adjust the amount of garlic parmesan sauce to your taste.
  • Make sure not to overcrowd the air fryer basket to allow potatoes to crisp evenly.
  • Broiling time varies by oven; watch cheese closely to avoid burning.
  • Leftovers can be refrigerated for up to 3 days and reheated in a skillet or oven.
