Description

This Garlic Chicken Potato Skillet is a flavorful one-pan dish that combines tender chicken, golden baby potatoes, and aromatic garlic butter. Perfect for a quick and easy weeknight dinner.

Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 2 tablespoons olive oil (divided)

Potatoes:

  • 1 lb baby potatoes (halved or quartered)
  • 1 small onion (sliced)
  • 4 garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley (chopped)
  • Optional: grated Parmesan for serving

Instructions

  1. Potatoes: In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the potatoes and cook for 12–15 minutes, stirring occasionally, until golden and fork-tender. Season with salt and pepper. Remove from the skillet and set aside.
  2. Chicken: In the same skillet, heat the remaining tablespoon of olive oil. Add the chicken pieces and season with Italian seasoning, smoked paprika, salt, and pepper. Cook for 5–7 minutes, until browned and cooked through. Add sliced onion and cook for another 2 minutes, then stir in the garlic and cook for 30 seconds until fragrant.
  3. Combine: Return the cooked potatoes to the skillet, add butter, and toss everything together. Cook for another 2–3 minutes to heat through and coat in the garlic butter.
  4. Finish: Sprinkle with fresh parsley and grated Parmesan if desired. Serve warm.
