Bread:
- 4 slices sourdough or rustic bread
Additional Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic (halved)
- 2 medium ripe tomatoes (sliced)
- 1 cup shredded mozzarella or fontina cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon chopped fresh basil or parsley
- salt and black pepper to taste
- crushed red pepper flakes (optional)
Instructions
- Preheat the broiler. Brush each slice of bread with olive oil and place on a baking sheet. Broil for 1–2 minutes per side until lightly toasted.
- Garlic infusion: While still warm, rub each slice with the cut side of the garlic cloves.
- Layering: Arrange sliced tomatoes on top of the bread, season with salt and pepper, and top with mozzarella and Parmesan cheeses.
- Broil again: Return to the broiler for 2–3 minutes or until the cheese is melted and bubbly.
- Final touches: Remove from the oven and sprinkle with fresh basil or parsley. Add red pepper flakes if desired. Serve immediately.
