Bread:

  • 4 slices sourdough or rustic bread

Additional Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic (halved)
  • 2 medium ripe tomatoes (sliced)
  • 1 cup shredded mozzarella or fontina cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh basil or parsley
  • salt and black pepper to taste
  • crushed red pepper flakes (optional)

Instructions

  1. Preheat the broiler. Brush each slice of bread with olive oil and place on a baking sheet. Broil for 1–2 minutes per side until lightly toasted.
  2. Garlic infusion: While still warm, rub each slice with the cut side of the garlic cloves.
  3. Layering: Arrange sliced tomatoes on top of the bread, season with salt and pepper, and top with mozzarella and Parmesan cheeses.
  4. Broil again: Return to the broiler for 2–3 minutes or until the cheese is melted and bubbly.
  5. Final touches: Remove from the oven and sprinkle with fresh basil or parsley. Add red pepper flakes if desired. Serve immediately.
