Description

Fresh Spring Rolls are a light and refreshing Vietnamese appetizer featuring delicate rice paper wrappers filled with vermicelli noodles, crisp vegetables, fresh herbs, and shrimp or tofu. These no-cook rolls are perfect for a healthy snack or meal and are served with flavorful dipping sauces.

  • 1 cup cooked rice vermicelli noodles
  • 1 cup shredded lettuce or napa cabbage
  • 1 medium carrot, julienned
  • 1/2 cucumber, julienned
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 12 medium cooked shrimp, halved lengthwise (or tofu slices for vegetarian option)

Instructions

  1. Soften the Rice Paper Wrappers: Fill a large shallow dish with warm water. Submerge one rice paper wrapper in the water for about 10–15 seconds, just until it becomes pliable and softened.
  2. Lay Out the Wrapper: Carefully remove the softened wrapper from the water and lay it flat on a clean surface, ready for filling.
  3. Add Fillings: In the lower third of the wrapper, layer a small amount of cooked vermicelli noodles, shredded lettuce, julienned carrot, cucumber, thinly sliced bell pepper, and fresh mint and cilantro leaves. Place 2 to 3 shrimp halves or tofu slices on top of the vegetable layer.
  4. Roll the Spring Roll: Fold the sides of the wrapper inward over the fillings, then tightly roll up from the bottom, similar to rolling a burrito, ensuring the ingredients are securely enclosed.
  5. Repeat the Process: Repeat the softening, filling, and rolling steps with the remaining rice paper wrappers and ingredients.
  6. Serve Immediately: Serve the fresh spring rolls immediately with your choice of dipping sauces such as peanut sauce, hoisin sauce, or nuoc cham (Vietnamese dipping sauce) for dipping.
