Scale
Main Ingredients
- 8 rice paper wrappers
- 1 cup cooked rice vermicelli noodles
- 1 cup shredded lettuce or napa cabbage
- 1 medium carrot, julienned
- 1/2 cucumber, julienned
- 1/2 red bell pepper, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 12 medium cooked shrimp, halved lengthwise (or tofu slices for vegetarian option)
Instructions
- Soften the Rice Paper Wrappers: Fill a large shallow dish with warm water. Submerge one rice paper wrapper in the water for about 10–15 seconds, just until it becomes pliable and softened.
- Lay Out the Wrapper: Carefully remove the softened wrapper from the water and lay it flat on a clean surface, ready for filling.
- Add Fillings: In the lower third of the wrapper, layer a small amount of cooked vermicelli noodles, shredded lettuce, julienned carrot, cucumber, thinly sliced bell pepper, and fresh mint and cilantro leaves. Place 2 to 3 shrimp halves or tofu slices on top of the vegetable layer.
- Roll the Spring Roll: Fold the sides of the wrapper inward over the fillings, then tightly roll up from the bottom, similar to rolling a burrito, ensuring the ingredients are securely enclosed.
- Repeat the Process: Repeat the softening, filling, and rolling steps with the remaining rice paper wrappers and ingredients.
- Serve Immediately: Serve the fresh spring rolls immediately with your choice of dipping sauces such as peanut sauce, hoisin sauce, or nuoc cham (Vietnamese dipping sauce) for dipping.
Notes
- Serve with peanut sauce, hoisin sauce, or nuoc cham (Vietnamese dipping sauce) for a flavorful complement.
- To prevent the spring rolls from drying out, cover them with a damp paper towel until ready to serve.
- Customize the fillings by adding avocado, mango, or purple cabbage for added variety and texture.
