- fresh ripe peaches (6 to 7 cups peeled, sliced)
- granulated sugar (3/4 cup)
- brown sugar (1/4 cup)
- cornstarch (1/4 cup)
- lemon juice (1 tbsp)
- ground cinnamon (1/2 tsp)
- ground nutmeg (1/4 tsp)
- salt (1/4 tsp)
Crust:
- unsalted butter (2 tbsp, cut into small pieces)
- refrigerated pie crusts (2, for double crust)
Instructions
- Preheat oven: Preheat oven to 425°F.
- Toss peaches: Toss sliced peaches with lemon juice in a large bowl.
- Mix sugars and spices: In another bowl, combine granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt.
- Coat peaches: Add sugar mixture to peaches, toss gently to coat.
- Prepare crust: Line pie dish with one crust. Fill with peach mixture and dot with butter.
- Top with crust: Cover with second crust, trim, and crimp edges. Vent with slits.
- Bake: Bake at 425°F for 15 mins, then at 350°F for 35-40 mins until golden.
