Beef Marinade
- 1 lb beef sirloin or flank steak, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce

Noodles and Vegetables
- 8 oz pancit bihon (rice noodles)
- 3 tbsp vegetable oil, divided
- 4 cloves garlic, minced
- 1 small onion, sliced
- 2 carrots, julienned
- 1/2 cup green beans, sliced
- 2 cups shredded cabbage
- 1 1/2 cups beef broth or water
- 2 green onions, sliced
- Lemon wedges for serving
Instructions
- Soak the Noodles: Soak the pancit bihon noodles in warm water for 10–15 minutes until softened. Drain and set aside.
- Marinate the Beef: In a bowl, combine the thinly sliced beef with soy sauce, oyster sauce, fish sauce (if using), ground black pepper, and cornstarch. Toss well to coat and let marinate for at least 15 minutes to tenderize and absorb the flavors.
- Cook the Beef: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated beef and stir-fry for 2–3 minutes until browned but not fully cooked through. Remove the beef from the pan and set aside.
- Sauté Aromatics and Vegetables: In the same pan, add the remaining 2 tablespoons of vegetable oil. Sauté the minced garlic and sliced onion until fragrant and translucent, about 2 minutes. Add the julienned carrots, sliced green beans, and shredded cabbage. Stir-fry the vegetables for 3–4 minutes until tender-crisp.
- Simmer with Broth and Noodles: Pour in the beef broth and bring the mixture to a simmer. Add the soaked and drained noodles and gently toss to combine. Cook for 3–5 minutes, stirring occasionally, until the noodles are tender and have absorbed most of the liquid.
- Combine Beef and Final Toss: Return the cooked beef to the pan with the noodles and vegetables. Toss everything together thoroughly and heat through to ensure flavors meld and the beef is warmed.
- Garnish and Serve: Garnish the pancit with sliced green onions and serve with lemon wedges on the side to add a fresh, citrusy brightness.

- For added flavor, a dash of sesame oil or a spoonful of hoisin sauce can be mixed in during the final cooking step.
