  • 1 tablespoon fresh cilantro, chopped
  • juice of 1 lime
  • salt and pepper to taste

Instructions

  1. Marinate the chicken: In a large bowl or resealable bag, combine olive oil, lime juice, cilantro, garlic, chili powder, cumin, paprika, salt, and pepper. Add the chicken and toss to coat. Marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  2. Grill the chicken: Preheat the grill or a grill pan over medium-high heat. Grill the chicken for 5–7 minutes per side, or until fully cooked and juices run clear.
  3. Prepare the avocado salsa: While the chicken cooks, combine diced avocados, tomato, red onion, cilantro, lime juice, salt, and pepper in a medium bowl. Gently mix and set aside.
  4. Finish and serve: Once the chicken is done, let it rest for 5 minutes before topping with the avocado salsa. Serve warm with rice, tortillas, or a fresh salad.
