Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
- Mix the wet ingredients: In a separate large bowl, beat together the softened coconut oil (or vegan butter), brown sugar, and granulated sugar until creamy. Add almond milk and vanilla extract, mixing until combined.
- Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring just until a soft dough forms. Fold in the chocolate chips.
- Bake the cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 9–11 minutes, or until the edges are golden brown.
- Cool and enjoy: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
