  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 cup bell pepper, chopped

Canned Goods and Seasoning

  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn (fresh or canned)
  • 1 can (14 oz) diced tomatoes with juice
  • 2 tbsp taco seasoning

Instructions

  1. Brown the Ground Beef: In a large pot over medium heat, cook the lean ground beef for 5 to 7 minutes until browned. Be sure to break it apart as it cooks and then drain the excess grease to keep the soup light.
  2. Sauté the Vegetables: Add the chopped onion and bell pepper to the pot with the beef. Sauté together until the vegetables soften, about 3 to 5 minutes, stirring occasionally to combine flavors.
  3. Add Beans, Corn, and Tomatoes: Stir in the rinsed black beans, corn, and diced tomatoes with their juice along with the taco seasoning. Mix everything well to ensure the seasoning is evenly distributed.
  4. Simmer the Soup: Let the mixture simmer gently for 15 minutes to meld the flavors. If the soup is too thick, adjust the consistency by adding broth or water as needed. Taste and season with salt or additional taco seasoning as desired before serving.
