- 2 cups leftover mashed potatoes
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup sour cream (optional, for creamier texture)

Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 12-cup muffin tin with nonstick spray.
- Prepare the mixture: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan, green onions, garlic powder, salt, pepper, and sour cream if using. Mix until well combined and smooth.
- Fill the muffin tin: Spoon the mixture evenly into the prepared muffin tin, filling each cup nearly to the top.
- Bake: Bake for 20–25 minutes, or until the tops are golden and set.
- Cool and serve: Let cool in the tin for 5 minutes before removing. Serve warm.
