Crust
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
Lemon Filling
- 2 large eggs
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/3 cup freshly squeezed lemon juice (about 2 lemons)
Finishing
- Powdered sugar, for dusting
Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper to prevent sticking.
- Mix Crust Ingredients: In a bowl, combine 1 cup all-purpose flour, 1/4 cup granulated sugar, and 1/2 cup softened unsalted butter. Mix until the dough becomes crumbly and holds together when pressed.
- Bake the Crust: Press the crumbly dough evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 15-20 minutes until the crust is lightly golden brown.
- Make the Lemon Filling: While the crust bakes, whisk together 2 large eggs and 3/4 cup granulated sugar in a medium bowl until smooth and pale.
- Add Dry Ingredients and Lemon Juice: To the egg and sugar mixture, add 2 tablespoons all-purpose flour, 1/4 teaspoon baking powder, and 1/3 cup freshly squeezed lemon juice. Whisk until fully combined to form the lemon filling.
- Pour Filling Over Crust: Once the crust is done baking, remove it from the oven and pour the lemon filling evenly over the hot crust layer.
- Bake Lemon Squares: Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges turn a light golden color.
- Cool Completely: Remove the pan from the oven and allow the lemon squares to cool completely in the pan to help them set properly.
- Dust and Serve: Before serving, dust the top with powdered sugar. Slice into 9 squares and enjoy.
Notes
- Use fresh lemon juice for the best flavor; bottled lemon juice may alter the taste.
- Allow the squares to cool completely before cutting to ensure clean slices.
- For easier removal, line your baking pan with parchment paper allowing overhangs for lifting the entire slab out.
- Store any leftovers in an airtight container in the refrigerator for up to 4 days.
