Crust
- 1 1/2 cups chocolate sandwich cookie crumbs (such as Oreos)
- 1/4 cup unsalted butter, melted
Mint Layer
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 2 tbsp milk
- 1 tsp mint extract
- Green food coloring (optional, for festive color)
Chocolate Topping
- 1 cup semi-sweet chocolate chips
- 2 tbsp unsalted butter
Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. In a medium bowl, combine the chocolate sandwich cookie crumbs and melted butter. Stir until the mixture is well combined and crumbly.
- Press the Crust into the Pan: Press the cookie mixture evenly into the bottom of the prepared baking pan to form the crust layer. Bake for 10 minutes, then remove from the oven and set aside to cool.
- Make the Mint Layer: In a medium bowl, beat the softened butter, powdered sugar, milk, mint extract, and a few drops of green food coloring (if using) until smooth and creamy. Spread the mint mixture evenly over the cooled crust.
- Make the Chocolate Topping: In a microwave-safe bowl, melt the semi-sweet chocolate chips and butter in 30-second intervals, stirring in between, until smooth. Pour the melted chocolate over the mint layer and spread it into an even layer using a spatula.
- Chill and Set: Refrigerate the bars for at least 2 hours, or until the chocolate has set and the bars are firm.
