Description

This Easy Chicken Stir Fry recipe is a quick and healthy meal packed with colorful vegetables and tender chicken slices coated in a flavorful homemade sauce. Perfect for a weeknight dinner, it combines simple ingredients with an Asian-inspired stir-fry technique to deliver a delicious dish your entire family will enjoy.

Ingredients

Scale

For the Stir Fry:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sugar snap peas
  • 1 small carrot, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Salt and black pepper to taste

For the Sauce:

  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth or water
  • 1 teaspoon sesame oil (optional)

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, chicken broth (or water), and sesame oil until smooth. Set aside to allow flavors to meld.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breasts, season with salt and pepper, and stir-fry for 4 to 5 minutes until the chicken turns golden and is cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Cook the Vegetables: Add the remaining 1 tablespoon of oil to the same skillet. Add broccoli florets, red and yellow bell peppers, julienned carrot, and sugar snap peas. Stir-fry the vegetables for 3 to 4 minutes until they turn crisp-tender but still retain some crunch.
  4. Add Aromatics: Stir in the minced garlic and grated fresh ginger to the vegetables and cook for about 30 seconds, until fragrant but not burnt.
  5. Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over everything and stir well to evenly coat all ingredients.
  6. Thicken the Sauce: Continue cooking the mixture for 1 to 2 minutes, stirring frequently, until the sauce thickens and everything is heated through.
  7. Serve: Serve the stir-fry hot over cooked rice or noodles. Optionally, garnish with sesame seeds or sliced green onions for added flavor and texture.

Notes

  • Thinly slicing chicken breasts helps them cook quickly and evenly in the stir-fry.
  • You can substitute chicken broth with water if desired, but broth adds more flavor.
  • For a vegetarian version, replace chicken with firm tofu and use vegetable broth.
  • Adjust the honey quantity based on your preferred sweetness level.
  • Serve immediately for best texture and flavor, as stir-fried vegetables tend to soften upon standing.
  • Garnishing with sesame seeds or green onions adds a lovely finish and subtle crunch.
