Description

These Easy Black Bean Taquitos are a quick, delicious snack perfect for any time of day. Made with a flavorful black bean and cheese filling seasoned with cumin, chili powder, and garlic, then rolled tightly in soft corn tortillas and baked until golden and crispy. Serve with salsa, guacamole, or sour cream for a satisfying treat that’s vegetarian and packed with protein and fiber.

Ingredients

Scale

Filling

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lime juice (optional)

Tortillas

  • 810 small corn tortillas (softened)
  • 12 tablespoons olive oil (for brushing)

To Serve

  • Fresh cilantro for garnish (optional)
  • Salsa
  • Sour cream
  • Guacamole

Instructions

  1. Prepare the Filling: In a medium bowl, mash the black beans with a fork or potato masher, leaving some chunks for texture. Stir in the shredded cheese, cumin, chili powder, garlic powder, salt, pepper, and lime juice if using. Mix well until combined.
  2. Warm the Tortillas: Heat a skillet or griddle over medium heat. Lightly warm each corn tortilla for 20-30 seconds on each side until soft and pliable to prevent cracking while rolling.
  3. Assemble the Taquitos: Place about 2-3 tablespoons of the black bean mixture in the center of each tortilla in a line. Roll the tortillas tightly around the filling to form taquito shapes.
  4. Prepare for Baking: Preheat your oven to 400°F (200°C). Place the rolled taquitos seam side down on a baking sheet lined with parchment paper or a silicone mat, spacing them apart for even crisping. Brush the tops lightly with olive oil.
  5. Bake the Taquitos: Bake the taquitos for 15-20 minutes, flipping halfway through, until they are golden brown and crispy.
  6. Serve: Remove from the oven and let cool for a minute. Serve hot garnished with fresh cilantro and accompanied by salsa, guacamole, or sour cream.

Notes

  • Softening the tortillas before rolling is essential to prevent cracking.
  • For extra crispiness, flip taquitos halfway through baking.
  • Lime juice adds brightness but is optional.
  • Customize fillings with additional veggies or spices as desired.
  • Store leftovers in an airtight container and reheat in the oven to maintain crispiness.
