- 1 pound ground chicken
- 1/2 cup finely chopped dill pickles
- 1/3 cup pickle juice
- 1/2 cup shredded cheddar cheese
- 1/4 cup almond flour or all-purpose flour
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried dill
- Salt and pepper to taste
- 2 tablespoons olive oil or avocado oil (for frying)
Instructions
- Mix Ingredients: In a large bowl, combine the ground chicken, chopped pickles, pickle juice, cheese, flour, egg, garlic powder, onion powder, dried dill, salt, and pepper. Mix well.
- Shape Fritters: Scoop 2 tablespoons of mixture and shape into small fritters.
- Fry Fritters: Heat oil in a skillet, fry fritters in batches for 3–4 minutes per side until golden and cooked through.
- Drain and Serve: Transfer cooked fritters to a paper towel-lined plate. Serve warm with your favorite sauce.
Notes
- For extra crispiness, chill the fritter mixture for 15 minutes before frying.
- To bake, preheat oven to 400°F and bake fritters for 15–18 minutes, flipping halfway through.
