Description

Deviled Egg Chicks are a delightful and festive appetizer perfect for Easter or springtime gatherings. These cute egg snacks feature hard-boiled eggs creatively transformed with a creamy, tangy yolk filling and decorated with carrot and olive pieces to resemble adorable little chicks popping out of their shells.

Eggs and Filling

  • 12 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Decorations

  • 1 small carrot (sliced into thin rounds, then cut into triangles for beaks)
  • 6 black olives (sliced into small pieces for eyes)

Instructions

  1. Boil the eggs: Place the eggs in a large pot and cover them with cold water. Bring the water to a rolling boil. Once boiling, cover the pot, remove it from heat, and let the eggs sit undisturbed for 10–12 minutes to cook through.
  2. Cool and peel: Drain the hot water and immediately cool the eggs under cold running water or an ice bath until they are easy to handle. Carefully peel all the eggshells off.
  3. Prepare the eggs for filling: Slice off the top third of each egg white to create a ‘hat’. Gently remove the yolks from the bottom larger portion of the eggs without breaking the whites.
  4. Make the yolk mixture: In a bowl, mash the yolks with mayonnaise, Dijon mustard, white vinegar, salt, and black pepper until smooth and creamy.
  5. Fill the egg whites: Transfer the yolk mixture into a piping bag or zip-top bag with a small corner cut off. Pipe the yolk filling into the larger cooked egg white portions, forming a small mound to imitate the chick’s body.
  6. Assemble the chicks: Place the sliced-off egg ‘hat’ pieces back on the filled eggs at a slight angle to look like little chicks popping out of their shells.
  7. Add the chick features: Use carrot triangles to create beaks and small olive pieces to form the eyes on each deviled egg chick.
  8. Chill and serve: Refrigerate the deviled egg chicks until ready to serve. This helps the filling set and enhances flavors.
