Description

This Detox Cabbage Soup is a vibrant, nutrient-packed dish perfect for cleansing and revitalizing your body. Featuring a blend of cabbage, garlic, ginger, and warming turmeric, simmered with diced tomatoes and vegetable broth, it offers a comforting yet light meal that’s easy to prepare and ideal for detoxifying your system.

Ingredients

Scale

Vegetables

  • 1 cup diced onion (about 1 small onion)
  • 1 cup diced carrots (about 2 medium carrots)
  • 1 cup diced celery (about 2 ribs)
  • 1 medium head of cabbage, cored and chopped
  • 3 teaspoons minced garlic (about 3 cloves)

Spices & Seasonings

  • 1 teaspoon ginger paste (or grated ginger)
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste

Liquids

  • 2 tablespoons olive oil
  • 1 (14.5-ounce) can diced tomatoes
  • 6 cups vegetable broth

Instructions

  1. Sauté vegetables: Heat olive oil in a large pot over medium-high heat. Add diced onion, carrots, and celery, then cook for about 5 minutes until the vegetables are slightly tender, stirring occasionally to prevent burning.
  2. Add cabbage and spices: Add the chopped cabbage, minced garlic, ginger paste, turmeric, salt, and pepper to the pot. Cook while stirring frequently until the cabbage has wilted, which should take a few minutes.
  3. Simmer: Pour in the diced tomatoes along with their juices and the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes until all the vegetables are soft and flavors are well combined.
  4. Serve: Ladle the soup into bowls and season with additional salt and pepper if desired. Serve hot for a soothing, cleansing meal.

Notes

  • This soup can be refrigerated for up to 4 days and freezes well for up to 3 months.
  • For extra protein, add cooked beans or lentils during the simmering step.
  • Adjust seasoning to taste; adding a splash of lemon juice before serving brightens the flavor.
  • Use low-sodium vegetable broth to control salt content for a healthier option.
  • To make it vegan, ensure your broth is plant-based and skip any non-vegan add-ons.
