Ingredients

Scale

Egg White Bites:

  • 2 cups liquid egg whites (or whites from about 10 large eggs)
  • 1/4 cup low-fat cottage cheese
  • 1/2 cup chopped spinach
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup shredded reduced-fat cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick spray or olive oil for greasing

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with nonstick spray or oil.
  2. Blend Egg Mixture: In a blender, combine the egg whites, cottage cheese, garlic powder, salt, and pepper. Blend until smooth and slightly frothy.
  3. Add Vegetables and Cheese: Stir in the spinach, bell pepper, red onion, and cheddar cheese.
  4. Fill Muffin Cups: Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  5. Bake: Bake for 18–22 minutes, or until the centers are set and the tops are slightly golden.
  6. Cool and Serve: Remove from the oven and let cool for 5 minutes before removing from the pan. Serve warm or store in the fridge for meal prep.
