Description

This Crockpot Mississippi Pot Roast is a tender, flavorful beef dish made easy with a few simple ingredients including ranch seasoning, au jus mix, pepperoncini peppers, and butter slow-cooked to perfection. The roast becomes melt-in-your-mouth delicious, infused with a tangy and savory sauce, perfect for a comforting family meal.

Ingredients

Scale

Beef

  • 34 lb chuck roast

Seasonings and Sauces

  • 1 packet ranch dressing mix (about 1 oz)
  • 1 packet au jus mix (about 0.85 oz)

Other Ingredients

  • 1 jar (16 oz) pepperoncini peppers, including juice
  • 1/2 cup (1 stick) butter

Instructions

  1. Place the Chuck Roast: Put the 3-4 lb chuck roast at the bottom of the slow cooker (crockpot) ensuring it lays flat for even cooking.
  2. Add Seasonings: Evenly sprinkle the ranch dressing mix and au jus mix packets over the entire surface of the roast, making sure the seasoning coats the meat well.
  3. Add Peppers and Juice: Pour the jar of pepperoncini peppers along with all the juice on top of the seasoned roast to add a tangy and mildly spicy flavor.
  4. Top with Butter: Place the 1/2 cup of butter in pieces on top of the roast and peppers to melt and enrich the sauce as it cooks.
  5. Slow Cook: Cover the crockpot and cook on low heat for 6 to 8 hours until the meat becomes very tender and easily shredded with a fork.
  6. Serve: Remove the roast from the crockpot and shred or slice it; serve with the pepperoncini and butter sauce spooned over the top. It pairs well with potatoes or vegetables.

Notes

  • Cooking time may vary depending on the thickness of the roast and slow cooker model.
  • For a spicier dish, add some of the pepperoncini seeds or extra peppers.
  • Leftovers can be refrigerated for up to 3 days or frozen for later use.
  • This recipe easily adapts to serving size; adjust seasoning packets according to the weight of your roast if necessary.
  • Use a well-marbled chuck roast for the best tenderness and flavor.
