Ingredients
Scale
Meat and Dairy
- 1 1/2 pounds sirloin steak, cut into 1-inch cubes
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1/2 cup sour cream
Vegetables
- 1 1/2 pounds baby potatoes, halved or quartered
- 1/4 cup chopped green onions
Seasonings and Others
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Nonstick cooking spray
Instructions
- Prepare the Crockpot: Spray the inside of the crockpot with nonstick cooking spray to prevent sticking and ensure easy cleanup.
- Toss Steak and Potatoes: In a large bowl, combine sirloin steak cubes and baby potatoes. Drizzle with olive oil and sprinkle garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss thoroughly until the steak and potatoes are evenly coated with the seasoning.
- Cook: Transfer the seasoned steak and potato mixture to the crockpot, spreading it out evenly. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the steak is tender and potatoes are thoroughly cooked.
- Add Cheese and Bacon: About 15 minutes before the end of cooking, sprinkle shredded cheddar cheese and crumbled cooked bacon over the top of the meat and potatoes. Cover again and allow the cheese to melt fully.
- Serve: Once the cheese has melted, serve the dish hot. Top each serving with a dollop of sour cream and a sprinkle of chopped green onions for freshness and added flavor.
Notes
- You can substitute Greek yogurt for sour cream for a tangier, healthier option.
- Swap shredded cheddar cheese for pepper jack cheese to add a spicy kick.
- For extra crispy bacon, cook it separately and add it just before serving to maintain its texture.
