  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Garlic Sauce:

  • 4 cloves garlic (minced)
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness of about 1/2 inch to ensure even cooking. Season both sides with salt and black pepper.
  2. Set Up Dredging Station: Arrange three shallow bowls: one with flour, the second with beaten eggs, and the third with a mixture of Parmesan cheese, panko breadcrumbs, and Italian seasoning. Coat each chicken breast by dredging first in flour, then dipping into the eggs, and finally pressing into the Parmesan-panko mixture to thoroughly cover the surface.
  3. Cook the Chicken: Heat olive oil and butter in a large skillet over medium heat. Place the coated chicken breasts in the skillet and cook for 4 to 5 minutes on each side until the exterior is golden brown and the chicken is cooked through. Remove the chicken from the skillet and set aside on a plate.
  4. Make the Garlic Sauce: Wipe out the skillet and melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the tablespoon of flour and cook for 1–2 minutes to form a roux. Gradually whisk in the chicken broth and bring to a simmer. Stir in the heavy cream and grated Parmesan cheese, cooking 3–5 minutes until the sauce thickens. Season with salt and pepper to taste.
  5. Combine and Serve: Return the cooked chicken breasts to the skillet and spoon the garlic sauce over them. Let simmer for 2 minutes to warm through and meld flavors together. Garnish with freshly chopped parsley before serving.
