Ground Beef Mixture

- 3/4 cup red enchilada sauce
Tortillas & Cheese
- 10 corn tortillas
- 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack, shredded
- 1 tablespoon olive oil
Instructions
- Preheat the Oven: Set your oven to 450°F (232°C) to prepare for baking the tacos to a crispy perfection.
- Cook the Ground Beef: Heat a skillet over medium-high heat. Add the ground beef and brown it thoroughly, breaking it up into small pieces as it cooks. Stir in the taco seasoning packet and the enchilada sauce, then bring the mixture to a gentle simmer. Once heated through and well combined, remove the skillet from the heat.
- Prepare the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30 to 60 seconds until they become pliable and easy to fold without cracking.
- Assemble the Tacos: Brush one side of each tortilla with olive oil. Place the tortilla on a baking sheet with the oiled side down. Spoon 2 tablespoons of cheese onto half of the tortilla, then add 1/4 cup of the cooked ground beef mixture on top of the cheese. Sprinkle another 2 tablespoons of cheese over the beef, then fold the tortilla over the filling to form a taco shape.
- Arrange and Bake: Repeat this assembly with the remaining tortillas and place all tacos in a single layer on the baking sheet. Bake in the preheated oven for 16 minutes or until the tortillas are crispy and the cheese inside is melted and bubbly.
- Serve: Remove the tacos from the oven and let them cool for 3 minutes before serving to allow them to set and the cheese to firm up slightly for easier handling.
