  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar
  • 3 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Coating:

  • 1 ½ cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • olive oil spray or drizzle for baking

Instructions

  1. Marinate the Chicken: In a large bowl, mix Greek yogurt, olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper. Add chicken tenders, toss to coat, cover, and refrigerate for 30 minutes to 4 hours.
  2. Prepare for Baking: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. In a shallow dish, combine panko breadcrumbs, Parmesan cheese, and thyme.
  3. Coat and Bake: Remove chicken from marinade, coat in breadcrumb mixture, place on baking sheet, and lightly spray with olive oil. Bake for 20–25 minutes, flipping halfway, until golden brown and fully cooked.
