Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until soft and translucent, then stir in minced garlic and cook for an additional 1 minute until fragrant.
  2. Add Vegetables and Spices: Add sliced carrots, diced potato (if using), ground cumin (if using), and a pinch of salt and black pepper. Stir to combine all the ingredients well.
  3. Simmer the Soup: Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover the pot, and let it simmer gently for 20 to 25 minutes, or until the carrots and potatoes are very tender.
  4. Blend the Soup: Remove the pot from heat. Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, carefully transfer the soup in batches to a regular blender and blend until creamy.
  5. Finish and Reheat: Stir in the coconut milk or heavy cream if using, and gently reheat the soup if necessary. Adjust seasoning with salt and pepper to taste.
