  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup baby spinach
  • ½ cup sun-dried tomatoes (drained and chopped)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese

For Garnish:

  • Chopped fresh basil for garnish (optional)

Instructions

  1. Season the Chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4–5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
  3. Prepare the Sauce: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for 30 seconds until fragrant. Add cherry tomatoes, sun-dried tomatoes, and baby spinach, cooking for 1–2 minutes until the spinach wilts. Pour in the heavy cream and chicken broth, then stir in the Parmesan cheese. Simmer for 3–4 minutes until slightly thickened.
  4. Combine and Serve: Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 2–3 minutes to heat through. Garnish with fresh basil if desired and serve.
