Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine or penne pasta and cook according to package directions until al dente, about 8-10 minutes. Drain and set aside.
- Prepare the chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the bite-sized chicken pieces with Italian seasoning, garlic powder, salt, and pepper. Add the chicken to the hot skillet and cook, stirring occasionally, until golden brown and fully cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
- Sauté garlic and sun-dried tomatoes: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and chopped sun-dried tomatoes, sautéing for 1 to 2 minutes until fragrant but not browned.
- Make the creamy sauce: Pour in the heavy cream and chicken broth, stirring to combine all ingredients. Bring the mixture to a gentle simmer. Add the grated Parmesan cheese, stirring continuously until it melts and the sauce thickens slightly to a creamy consistency.
