Soup:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 (14.5-ounce) can diced tomatoes with juices
- 1 (9-ounce) package refrigerated cheese tortellini
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups fresh spinach, roughly chopped
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
Garnish:
- Chopped parsley or basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 4–5 minutes until soft and translucent.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in vegetable broth and diced tomatoes with their juices. Bring to a boil.
- Add tortellini, Italian seasoning, salt, and pepper. Reduce heat to a simmer and cook for 5–7 minutes, or until tortellini are tender.
- Stir in chopped spinach and cook for 2–3 minutes until wilted.
- Reduce heat to low, then add heavy cream and Parmesan cheese, stirring until fully combined and creamy.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with fresh parsley or basil.
Notes
- For a richer flavor, add a pinch of crushed red pepper or a splash of white wine.
- To make it heartier, add cooked Italian sausage or white beans.
