1 tablespoon olive oil

  • 3 cloves garlic (minced)
  • 1 (12 oz) jar roasted red peppers (drained)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
  2. Add the roasted red peppers and cook for another 2 minutes. Transfer the mixture to a blender and blend until smooth.
  3. Return the mixture to the saucepan over medium-low heat. Stir in the heavy cream, Parmesan cheese, Italian seasoning, red pepper flakes, salt, and black pepper.
  4. Simmer for 5–7 minutes, stirring occasionally, until the sauce thickens slightly. Stir in the butter until melted and fully incorporated.
  5. Serve hot over pasta, chicken, or vegetables.

Notes

  • For a dairy-free version, use full-fat coconut milk and nutritional yeast instead of cream and Parmesan.
