Ingredients
Scale
Chicken and Mushrooms
- 4 boneless skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 8 ounces sliced mushrooms
Sauce
- 1/4 cup butter
- 2 garlic cloves, minced
- 1 tablespoon flour
- 1/2 cup chicken broth
- 1 cup heavy cream or half and half
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 cup chopped spinach
Instructions
- Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the thinly sliced chicken breasts with salt and pepper. Cook the chicken for 3-5 minutes on each side, until browned and cooked through with no pink remaining in the center. Remove the chicken from the skillet and set aside on a plate.
- Sauté the Mushrooms: In the same skillet, add the sliced mushrooms and sauté for several minutes until they become tender and release their moisture. Remove the mushrooms and set them aside with the chicken.
- Make the Sauce: Reduce heat to medium, add the butter to the skillet and melt it. Add the minced garlic and cook until fragrant and tender, about 1 minute. Whisk in the flour and cook for another minute until the mixture thickens slightly.
- Add Liquids and Seasonings: Slowly whisk in the chicken broth followed by the heavy cream (or half and half), stirring constantly to prevent lumps. Add the grated parmesan cheese, garlic powder, pepper, and salt. Stir until the sauce is smooth and begins to thicken.
- Simmer with Spinach: Add the chopped spinach to the sauce and let it simmer, stirring occasionally, until the spinach wilts and the sauce thickens to your desired consistency.
- Combine and Serve: Return the cooked chicken and mushrooms to the skillet, spooning the sauce over them to coat evenly. Heat through briefly, then serve immediately. For a complete meal, serve over cooked pasta or rice if desired.
Notes
- Thinly slicing the chicken breasts helps them cook evenly and quickly.
- Use freshly grated parmesan for best flavor and smoother sauce texture.
- Heavy cream will give a richer sauce compared to half and half.
- Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
