Instructions

  1. Heat and Sauté Onions: Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
  2. Add Garlic: Stir in minced garlic and cook for 30 seconds until fragrant, being careful not to burn the garlic.
  3. Cook Mushrooms: Add sliced mushrooms and cook for 5–6 minutes, stirring occasionally, until they release their moisture and begin to brown, enhancing their flavor.
  4. Add Potatoes and Broth: Stir in the diced potatoes, broth, dried thyme, salt, and black pepper. Bring the mixture to a boil.
  5. Simmer: Reduce heat to low, cover the pot, and simmer for 15–20 minutes or until the potatoes are tender when pierced with a fork.
  6. Blend Soup: For a creamier texture, blend part of the soup using an immersion blender directly in the pot, or carefully transfer 1–2 cups to a blender, puree until smooth, and return it to the pot.
  7. Add Cream and Season: Stir in the heavy cream or milk if using, and heat through. Taste the soup and adjust seasoning with additional salt or pepper as desired.
  8. Serve: Ladle the hot soup into bowls and garnish with fresh chopped parsley if desired. Serve immediately for the best flavor.
