Description

Creamy Marry Me Shrimp Pasta is a luscious and comforting dish featuring tender shrimp cooked in a garlic-infused creamy sauce enriched with Parmesan cheese and sun-dried tomatoes. This delicious pasta combines Italian seasoning and a hint of red pepper flakes for a perfect balance of flavors, ready in just 30 minutes, making it an ideal weeknight dinner option.

Ingredients

Scale

Pasta

  • 12 oz linguine or spaghetti

Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • Salt and pepper to taste

Sauce

  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste

Garnish

  • Fresh basil leaves for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.
  2. Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Season the peeled and deveined shrimp with salt and pepper. Add them to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Sauté Garlic: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Prepare the Sauce: To the skillet with garlic, add heavy cream, chicken broth, grated Parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes if using. Stir well and let the sauce simmer for 4-5 minutes until it thickens slightly.
  5. Toss Pasta in Sauce: Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, gradually add some of the reserved pasta water to reach your desired consistency.
  6. Combine Shrimp: Return the cooked shrimp to the skillet with the pasta and sauce. Stir to combine and let it cook together for another 2 minutes until the shrimp is heated through.
  7. Season and Garnish: Taste the dish and adjust seasoning with salt and pepper as needed. Garnish with fresh basil leaves and serve warm.

Notes

  • You can substitute chicken broth with vegetable broth for a different flavor profile.
  • If you prefer a spicier dish, increase the amount of crushed red pepper flakes.
  • Use freshly grated Parmesan cheese for the best flavor and creamy texture.
  • Reserve some pasta water carefully, as it helps to adjust the sauce consistency perfectly.
  • This dish pairs well with a side salad or garlic bread for a complete meal.
