Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced

For the Sauce:

  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste
  • 12 oz fettuccine or penne pasta
  • 1/2 cup reserved pasta water
  • 2 tablespoons butter
  • Optional: chopped parsley and extra Parmesan for garnish

Instructions

  1. Cook the Pasta: Boil salted water and cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Cook the Chicken: In a skillet, cook chicken in olive oil until golden and cooked through. Remove chicken and set aside.
  3. Make the Sauce: Melt butter in the skillet, add garlic, pour in cream, simmer, then stir in Parmesan and seasonings until slightly thickened.
  4. Combine and Serve: Add pasta and chicken back to the skillet, toss to coat in sauce, adding reserved pasta water as needed. Garnish with parsley and extra Parmesan.
