For the Chicken:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
For the Sauce:
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt, or to taste
- 12 oz fettuccine or penne pasta
- 1/2 cup reserved pasta water
- 2 tablespoons butter
- Optional: chopped parsley and extra Parmesan for garnish
Instructions
- Cook the Pasta: Boil salted water and cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
- Cook the Chicken: In a skillet, cook chicken in olive oil until golden and cooked through. Remove chicken and set aside.
- Make the Sauce: Melt butter in the skillet, add garlic, pour in cream, simmer, then stir in Parmesan and seasonings until slightly thickened.
- Combine and Serve: Add pasta and chicken back to the skillet, toss to coat in sauce, adding reserved pasta water as needed. Garnish with parsley and extra Parmesan.

- Enhance with sautéed mushrooms, spinach, or sun-dried tomatoes.
- Substitute half-and-half for a lighter sauce.
