Ingredients

Salmon:

4 salmon fillets (skinless or skin-on), salt and pepper to taste,

Sauce:

2 tablespoons olive oil, 2 tablespoons butter, 5 cloves garlic, minced, 1 cup cherry tomatoes, halved, 1/2 cup sun-dried tomatoes in oil, drained and chopped, 2 cups baby spinach, 1 cup heavy cream, 1/4 cup grated Parmesan cheese, 1/2 teaspoon Italian seasoning, 1/4 teaspoon red pepper flakes (optional), fresh basil or parsley for garnish


Instructions

  1. Season the salmon: Season the salmon fillets with salt and pepper on both sides.
  2. Sear the salmon: Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets for 4–5 minutes per side until golden and cooked to your liking. Remove and set aside.
  3. Prepare the sauce: In the same skillet, melt butter over medium heat. Add garlic and cook until fragrant. Add cherry tomatoes, sun-dried tomatoes, and cook until slightly softened. Stir in baby spinach until wilted. Pour in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until slightly thickened.
  4. Combine salmon and sauce: Return salmon to the skillet, spoon sauce over the top, and cook for 2 more minutes to reheat.
  5. Garnish and serve: Garnish with fresh basil or parsley and serve hot.
