Beef Tips:
- 2 pounds beef stew meat (cut into 1-inch cubes)
- 1 tablespoon olive oil
Mushroom Mixture:
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 2 cups sliced mushrooms
Creamy Sauce:
- 1 (10.5 oz) can cream of mushroom soup
- 1 (1 oz) packet dry onion soup mix
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- ½ teaspoon black pepper
- ½ cup sour cream
Additional:
- Chopped parsley for garnish (optional)
- Cooked egg noodles or mashed potatoes for serving
Instructions
- Prepare Beef: In a large skillet, sear the beef cubes in olive oil until browned. Transfer to the crockpot.
- Layer Ingredients: Add onion, garlic, and mushrooms over the beef in the crockpot.
- Mix Sauce: Whisk cream of mushroom soup, onion soup mix, beef broth, Worcestershire sauce, and pepper. Pour over the ingredients in the crockpot.
- Cook: Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender.
- Finish: Stir in sour cream 15 minutes before serving. Serve over noodles or potatoes, garnished with parsley.
