Soup Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 lb boneless, skinless chicken breasts, cut into small pieces
- 1 cup long-grain white rice
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup heavy cream
- Fresh parsley for garnish
Instructions
- Prepare the Vegetables: Heat olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and celery. Sauté the vegetables until they become softened and fragrant, about 5 minutes.
- Add Garlic: Stir in the minced garlic and cook for an additional minute to release its aroma without burning.
- Cook Chicken: Add the small pieces of chicken breasts to the pot and cook until they are lightly browned on all sides, approximately 5 minutes.
- Add Rice and Broth: Stir in the long-grain white rice, chicken broth, dried thyme, and dried parsley. Bring the mixture to a boil, then reduce the heat to a simmer. Cook gently for about 20 minutes until the rice is tender and the chicken is fully cooked.
- Stir in Cream and Season: Pour in the heavy cream and stir to combine. Season the soup with salt and pepper according to your taste.
- Serve: Ladle the hot creamy chicken and rice soup into bowls and garnish with fresh parsley for a pop of color and fresh flavor.
Notes
- For a lighter version, substitute heavy cream with half-and-half or milk, though the soup will be less rich.
- To make the soup gluten-free, ensure that the chicken broth used is gluten-free certified.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop with a splash of broth or water.
- You can add other vegetables such as peas or corn to increase nutrition and flavor.
- If you prefer a thicker soup, increase the amount of rice slightly or add a slurry of cornstarch and water at the end of cooking.
