Instructions

  1. Boil Vegetables: In a large pot, combine the peeled and cubed potatoes with the cauliflower florets. Cover them with cold, salted water and bring to a boil. Once boiling, reduce the heat and let it simmer for 15–20 minutes, or until both vegetables are fork-tender.
  2. Drain and Return to Pot: Drain the cooked vegetables thoroughly and return them to the warm pot to prepare for mashing.
  3. Add Ingredients and Mash: Add the unsalted butter, sour cream (or Greek yogurt), milk (or heavy cream), minced garlic, salt, and black pepper to the pot. Using a potato masher or an immersion blender, mash or blend the mixture until it becomes smooth and creamy. Add more milk as needed to achieve the desired consistency.
  4. Season to Taste and Garnish: Taste the mash and adjust seasoning if needed. Transfer the creamy mash to a serving dish and garnish with chopped fresh chives or parsley if desired. Serve warm for best flavor and texture.
