Instructions
- Boil Vegetables: In a large pot, combine the peeled and cubed potatoes with the cauliflower florets. Cover them with cold, salted water and bring to a boil. Once boiling, reduce the heat and let it simmer for 15–20 minutes, or until both vegetables are fork-tender.
- Drain and Return to Pot: Drain the cooked vegetables thoroughly and return them to the warm pot to prepare for mashing.
- Add Ingredients and Mash: Add the unsalted butter, sour cream (or Greek yogurt), milk (or heavy cream), minced garlic, salt, and black pepper to the pot. Using a potato masher or an immersion blender, mash or blend the mixture until it becomes smooth and creamy. Add more milk as needed to achieve the desired consistency.
- Season to Taste and Garnish: Taste the mash and adjust seasoning if needed. Transfer the creamy mash to a serving dish and garnish with chopped fresh chives or parsley if desired. Serve warm for best flavor and texture.
