Ingredients
Scale
Custard:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
Additional:
- 2 ripe bananas, sliced
- whipped cream for topping
- crushed vanilla wafers or graham crackers for garnish (optional)
Instructions
- Custard Preparation: In a medium saucepan, whisk together sugar, cornstarch, and salt. In a separate bowl, whisk egg yolks with a splash of milk until smooth. Gradually whisk in the rest of the milk. Slowly pour the wet mixture into the saucepan, whisking constantly to avoid lumps. Cook over medium heat, stirring constantly until thickened and bubbling, about 6–8 minutes.
- Finalizing Custard: Remove from heat; stir in butter and vanilla extract until smooth. Let the custard cool slightly.
- Assembly: In serving cups, layer sliced bananas and warm custard. Repeat for additional layers. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill for at least 2 hours.
- Serving: Top with whipped cream and crushed cookies just before serving.
Notes
- Use very ripe bananas for optimal flavor.
- For a softer texture, fold in banana slices just before chilling.
- For added richness, substitute half-and-half for half the milk.
