Description

This Cranberry Spinach Stuffed Chicken Breasts with Brie recipe features juicy chicken breasts filled with a savory mixture of sautéed spinach, garlic, and dried cranberries, complemented by creamy brie cheese. Baked to perfection, it offers a festive and flavorful main course perfect for holiday dinners or special occasions.

Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Toothpicks or kitchen twine to secure

Stuffing

  • 1 cup fresh spinach, chopped
  • ½ cup dried cranberries, roughly chopped
  • 4 oz brie cheese, sliced
  • 1 garlic clove, minced
  • ½ teaspoon dried thyme

Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 375°F (190°C). Carefully cut a horizontal pocket into each chicken breast without slicing through completely. Season both sides with salt and pepper.
  2. Sauté Spinach Mixture: Heat olive oil in a skillet over medium heat. Add minced garlic and chopped spinach, sautéing for 1 to 2 minutes until the spinach is wilted. Remove from heat and stir in the chopped dried cranberries and dried thyme for added flavor.
  3. Stuff the Chicken: Spoon the spinach and cranberry mixture evenly into each chicken breast pocket. Add one or two slices of brie cheese inside each pocket. Secure the openings using toothpicks or kitchen twine to keep the filling inside during cooking.
  4. Bake the Chicken: Place the stuffed chicken breasts in a greased baking dish. Bake in the preheated oven for 25 to 30 minutes or until the internal temperature of the chicken reaches 165°F (74°C), and the chicken is cooked through and golden on the outside.
  5. Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes before serving to allow the juices to redistribute and flavors to meld.

Notes

  • For an extra burst of flavor, drizzle the finished chicken with a balsamic glaze before serving.
  • Serve this dish alongside wild rice or roasted vegetables to complete the meal.
  • Brie cheese can be substituted with goat cheese or mozzarella according to your preference.
