  • 2 large eggs

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup dried cranberries
  • 1 cup chopped pecans
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar. Beat in the eggs one at a time, then add the vanilla extract and orange zest.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
  4. Add Mix-Ins: Stir in the oats, cranberries, pecans, and white chocolate chips if using.
  5. Bake: Spread the batter evenly in the prepared pan and bake for 28–32 minutes, or until golden brown and set in the center.
  6. Cool and Serve: Allow to cool completely before cutting into bars.
