Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen corn
  • 1 cup canned black beans, rinsed and drained
  • 1 cup barbecue sauce
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Additional:

  • 1 (32-ounce) bag frozen tater tots
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Cook Ground Beef Mixture: In a large skillet, cook onion in olive oil until softened. Add garlic and ground beef, cook until browned. Drain excess grease. Add corn, black beans, barbecue sauce, sour cream, 1 cup cheese, paprika, salt, and pepper. Mix well.
  3. Assemble Casserole: Transfer mixture to a greased baking dish. Top with tater tots in a single layer.
  4. Bake: Bake uncovered for 25 minutes. Sprinkle remaining cheese on top and bake for another 10–15 minutes until cheese is melted and bubbly, and tater tots are golden.
