Ground Beef Mixture:
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 cup frozen corn
- 1 cup canned black beans, rinsed and drained
- 1 cup barbecue sauce
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese, divided
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Additional:
- 1 (32-ounce) bag frozen tater tots
- Chopped green onions or parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Cook Ground Beef Mixture: In a large skillet, cook onion in olive oil until softened. Add garlic and ground beef, cook until browned. Drain excess grease. Add corn, black beans, barbecue sauce, sour cream, 1 cup cheese, paprika, salt, and pepper. Mix well.
- Assemble Casserole: Transfer mixture to a greased baking dish. Top with tater tots in a single layer.
- Bake: Bake uncovered for 25 minutes. Sprinkle remaining cheese on top and bake for another 10–15 minutes until cheese is melted and bubbly, and tater tots are golden.
- Serve: Garnish with green onions or parsley. Serve hot.

- For a spicier version, add chopped jalapeños or hot sauce to the beef mixture.
- Ground turkey or chicken can be used instead of beef for a lighter option.
